The people who did the art for Doom used cameras to take reference images of their hands holding prop weapons. I believe the chainsaw in Doom was actually some toy they found or something. Anyway the history of Doom's approach to its art style is thoroughly documented and a casual search of the internet can find droves of information. People to this day are still making mods and wads for the game. The monsters were models they took pictures of while spinning them on a turnstile. They then cleaned up the images using Doom's color palette. It's actually far easier now to use 3D models for doing it like Quake used. People assume 2D pixel art is easier than 3D modelling, but I will tell you it's not true. 2D is harder and more tedious than modeling a low-poly gun from reference images. If you have too much difficulty doing the art, my suggested would to be to go for a Quake/Hexen era type game instead. Quake's guns are more cartoon than realistic which gives you more artistic license as well.

Also if you mean you can't get pixel art to show properly in CC then you need to turn off bilinear filtering in the irrEdit properties. Go to Tools > Options and check show irrEdit options. Then restart CC. Now under View you will see "Show irrEdit properties". Click and that and it will open a menu where you turn off the 4 bilinear filters for the material of your model. Note you have to do this for all the materials on the model you want to change.

I made this Doom-like project as more of a demo to help some people figure out some stuff but it could be helpful to you. Here's the link to the forum post:

And here's the link to the project:

It was made in CopperCube 6.5.1 so the sounds do not seem to work, but everything else seems okay. It has an animated Imp (not 8-directional) from Doom that throws fireballs and the pistol and shotgun is working. You need to go up one of the corner hills to find the shotgun on the ground. This was made more for learning activity than anything else. I wouldn't do the animation this way now as I've learned to program better since then.
