You can use explosion or destruction animation.... And there is an option in the shoot action...action on impact you can add another action there to change abimation or to make an explosion or anything you want...

There is no easy way of doing this... But you can use a proximity behaviour for your scenenode and on entering of the bullet scenenode you can trigger an action to destroy the bullet...
Wheever a bullet scenenode gets into proximity with the enemy scenenode it will be destroyed ... Thats the only possible way of doing this right now... Untill we have a better collision detection api ...
