I don't know of any books which were made specifically for CopperCube (I know one or two books mentioned it) but that'd be nice to have, yes!
CC is very easy to use and is quite approachable. As long as you know how to import your assets and basic gamedev logic (such as variables) then you can make reasonably complex games without typing any code at all.
