When I use floating text and it looks centered in RocketCake. When I preview or publish it, it is off to the left. How do I get it to stay centered?

It is positioned relative to its parent. So if your window or the element the text is in changes its size, its position is also moved. You can also try this in rocketCake itself, by moving the slider on the bottom to make your website a different size (or use a device like a phone in the combo box).
There are lots of different ways to achieve what you want to do. One way would be put a text into a container and select the "center align" text formatting.
